*These finally made their way to school!

The picture really doesn't do them justice. They are delicious and the kids loved them! (all 50 of them - 2 classrooms, 3 teachers.) My friend (her son is in Jacob's class) called me from the grocery store after school and asked me for the recipe so she could make 'Irish Potatos' for dinner, becasue Alex loved them so much! He didn't tell her they were candy. Try them for yourself, they are pretty easy to make. Enjoy!
TRADITIONAL IRISH POTATO CANDIES
makes about 24 pieces
1/2 cup (1 stick) butter - room temp
1 pound confectioners sugar
1/4 cup heavy whipping cream
1 cup shredded coconut
1/2 cup sifted confections sugar
4 teaspoons groud cinnamon (or more, if desired)
1. By hand or with an electric hand mixer, blend together the butter, 1 pound sugar, the cream and coconut. Chill unitl firm, about 2 hours.
2. Using a tablespoon and hands, scoop and form mixture into small, walnut size balls of irregular shape ('potato-like' shapes). Set on waxed paper.
3. Sift together the 1/2 cup sugar with the cinnamon and transfer to a bowl or plastic bag. Add candies a few at a time and coat evenly with mixture for a 'potato skin' look.
4. Store in air tight containers. May need to be refrigerated to stay firm.
